Poached Egg Curry Under 30 mins | How To Make Poached Egg Curry Under 30 mins!

Poached egg curry is an exceptionally easy and quick recipe
prep time: 10 minscook time: 30 minstotal time: 40 mins

ingredients


  • 6 eggs.
  • 2 large onions finely chopped.
  • 8 large pods garlic finely chopped or 1 tablespoon heaped chopped garlic.
  • 1-inch ginger finely chopped or grated.
  • 3 small tomatoes.
  • 1 bay leaf.
  • 4 Peppercorns.
  • 1/4 teaspoon turmeric powder.
  • 1 teaspoon coriander powder.
  • 1/4 teaspoon cumin powder.
  • 1/2 teaspoon paprika powder.
  • 5 green chilies slit (optional)
  • 5 tablespoons mustard oil or canola oil.

instructions


  1. Heat 5 tablespoons mustard oil in your favorite pan over medium-high heat. When hot gently release the bay leaf, wait for a few seconds then release the chopped onions and saute for 3 mins. Next, add the chopped garlic and the chopped ginger, saute until the onions are translucent and the raw smell from the ginger & garlic completely disappears.
  2. Now add the turmeric, cumin, coriander, and the paprika powder, saute for 3 mins. Add the chopped tomatoes, saute for 5 mins until the tomatoes are mushy and start to release oil.
  3. When the mixture in the pan starts to release oil than add about 2 cups water. Cover and cook for 5 mins.
  4. Gently crack the eggs on the gravy bed and cover and cook for 5 more mins or until the eggs are completely poached in the gravy.
  5. Garnish with slit green chilies and chopped coriander leaves.
  6. Enjoy!

NOTES:

*Do not add much water to the gravy because the poached eggs will be distorted.
*If you do not want a spicy gravy just reduce the heat or totally opt out on the green chilies.
*Crack the eggs directly on the gravy and crack them one at a time.
