Vegan Mango+Coconut Popsicle With Tips & Tricks.

This handsome Vegan ice-cream contains only 3 ingredients and it's so easy to make that you can make it even in your dreams! Yes, you heard me right...only 3 ingredients and you are all set for this vegan popsicle recipe. And just in case you don't happen to have any popsicle molds at your home, no worries at all, you can freeze these babies in small paper cups too! Are you excited? So let's get down to the nitty-gritty of these attractive vegan manogo+coconut popsicle.


Popsicles are the heart and soul of my home during the summer season, well, my regular readers you already guessed it right...yes yes yes I have a 4 years old ice-cream freak at my home, and he is a very colorful little guy who just loves all the colors! The more color I include in his food the more smiles I get back!


Oh! I am a little bit more excited to let you know the recipe of this attractive Vegan popsicle that tastes amazing! You will need 1/2 can of rich and creamy unsweetened coconut milk which has a saturated fat content of 60%. No not the thin varieties that are available in paper cartons, a thick rich creamy coconut milk is a must in this recipe and there's no alternative to it if you strictly want to make your popsicles a vegan variety. 


We are not Vegans as I always say, we only happen to love Vegan foods. And everything that contains something coconut fascinates me a lot, I love the taste of coconut, but hubbs has a different taste altogether. He is not a coconut freak unlike me...Lol! Well, whatever, so coming back to the recipe, I sweetened my popsicles naturally with organic maple syrup and I also pureed 1 cup fresh mango chunks and sweetened it with maple syrup too, of course, we love sweet Popsicles! You can very well adjust the sweetness according to your taste preferences. Then I scooped the coconut milk + maple syrup mixture and the mango puree + maple syrup mixture alternately in the molds and froze the layers in 10 minutes slot. This will give you more defined and colorful layers. That's it...scoop - freeze....scoop - freeze... Just remember you need to freeze each layer for 10 minutes only if you want defined colored layers that don't get all mixed up. This is a simple trick that only a few people reveal! So, here's the detailed recipe for you...


YIELDS: 8 small popsicles as seen in the picture.

INGREDIENTS:

*1/2 can Or 200 ml rich & creamy unsweetened coconut milk (60% saturated fat content)

*1 cup fresh Mango chunks.

*1/4 cup + 1/4 cup organic maple syrup.

METHOD:

*Add the mango chunks and the 1/4 cup maple syrup into a blender jar until pureed. Set aside.

*Pour 1/2 the content of a full can rich and creamy coconut milk into a clean bowl.

*Then add rest of the 1/4 cup maple syrup and give it a good whisk. Until fully incorporated.

*Next add about 1 tablespoon mango puree in the mold. Pop it in the freezer and freeze for 10 minutes.

*After 10 minutes take out the mold from the freezer then add about 1 tablespoon of the coconut milk + maple syrup mixture and freeze it for 10 minutes.

*Next add the second layer of the Mango puree. At this stage insert the popsicle stick and then pop it for 10 minutes more in the freezer.

*Finally add the topmost layer of the coconut milk. Cover the molds and freeze them until set or overnight. 

*Enjoy!

MY NOTES:

*Freeze each layer for 10 minutes. This will ensure well-defined layers.

*Only try the recipe if you have rich and creamy coconut milk that has a saturated fat content of 60%.

*Substitute the maple syrup with honey, in that case, use a little less honey as I feel honey is sweeter than maple syrup. With honey, it won't be a Vegan recipe!
