Hubbs was telling me the other day that he would be very happy to have some granola bars for his mid-day cravings and for breakfast too. We love quick breakfasts on weekdays and granola bars are always a perfect fit, they are ridiculously easy to make, requires only a few ingredients & the no bake versions emerge out victorious even without an oven! How wonderful does that sound?  The gluten-free granola bars are Super tasty and are blessed with almost a negligible prep time. The granola bars also requires hassle-free prep steps and lacks any fuss at all! Granola bars or any kind of no-bake breakfast bars always tops the chart for our "Breakfast in a hurry" lifestyle and also our mid-day snack cravings. They are an appropriate and the best fit.


Hubbs requested for something that was made with oats and only oats! He was very specific in describing the texture of his granola bars - not crispy, not crunchy and not too soft either, something in between. I ended up making these crunchy gluten-free granola bars with toasted oats and whole almonds and filled up the sweetness with delicious Mejdool dates. I added all the crunch to the oats dates granola bars by simply toasting the oats and the almonds. As simple as that, and let me tell you that toasting simply adds extra flavors and boosts the crunch factor manifold. Only 7 ingredients & 10 mins granola bars turned out surprisingly super yummy and the toasted oats and the toasted almonds gave an exquisite crunch to the Oats dates chia granola bars. They were neither overwhelmingly soggy and soft nor super crispy and crunchy-just the right amount of crunch and softness. These vegan granola bars had the best of both worlds! I also kept my almonds whole and oh dear! loved that crispy crunchy bite of the toasted nuts - do keep your almonds whole and don't be scared by thinking if the whole almonds will block the way of your knife. They won't only if you have a sharp knife handy! Or if your heart skips a bit & it feels squeamish than you can always chop your toasted nuts. Anyways the bars will taste awesome - Just follow the recipe and don't sub this for that and that for this. Only sub what's mentioned in the recipe.



Hubbs became extremely happy with the texture and the taste and, my 4 years old too approved the recipe by giving me so many thumbs ups LOL! The dates are ground in a food processor or a powerful blender until slightly mushy but not completely smooth. This is a very important step to remember. The dates should just come together and not turn to a complete paste. The right consistency will give your granola bars the perfect texture. I also added a small amount of coconut oil for a bit of moisture in my bars, you may skip this part if you want to. 



Here's the step by step method to prepare these incredibly delicious Oats dates granola bars. Only 7 ingredients granola bars & no baking required too! Did you just ask me the prep time? It's only 15 minutes! Yaay! Here are some more bar recipes that I made recently. They taste heavenly too ;) 

1. Chocolate Almond Butter Bars.

2. Chia seeds & peanut butter digestive energy bars.

INGREDIENTS:

*1 cup loosely packed dates (pitted). About 8 Medjool dates. I always prefer Medjool dates, they are so delicious.

* 1/4 cup Maple syrup or honey.

*1/4 cup creamy Almond butter or peanut butter.

*1 cup toasted almonds.

*1 tablespoon chia seeds.

*1 - 1/2 cups gluten-free rolled toasted rolled oats.

*1 teaspoon extra virgin coconut oil.

METHOD:

*Add the pitted dates in a blender or food processor and blend until small bits, not mushy or a paste.

*Pre-heat the oven at 350 degrees F.


*Toast the almonds and the oats at 350 degrees F or toast them on a non-stick skillet over medium heat.


*Take a dry bowl and add the toasted oats, almonds, the chia seeds, the melted extra virgin coconut oil and the dates. Keep aside.


*Next heat a saucepan over medium heat, when hot add the maple syrup or honey and the almond butter or peanut butter, stir and mix, don't boil.

*Next add the nut butter and the maple syrup mixture to the bowl.


*Mix until fully incorporated.

*Line an 8"x8" pan with parchment paper. 

*Transfer the mixture on to the baking tray lined with parchment.


*Spread it evenly press it hard with the bottom of a glass. This will help the bars to set very well.

*Keep it in the refrigerator for 1-2 hours or until set.


*Cut it into bars with a sharp knife.

*Enjoy!

MY NOTES:

*Blend the dates so that tiny bits remain. Don't blend them into a paste. This is very important.

*Toasting the nuts and the oats gives these no-bake breakfast bars an incredible crunch and enhances the taste manifold.

*Press the mixture into the baking tray as hard as possible. This will ensure very good granola bars.
