Hello, dear readers, we are back from our mini-vacation to the Chaska beach and the Cedar point beach with marvelous memories but very bad tans. The first thing we had after coming back home is this chilled glass of Mango Kale smoothie - it was the perfect delicious drink to soothe our parched souls. Yes, it was hot and the sun was mighty at the beach! I love beaches and I love it a lot, given a choice I always prefer beach destinations over anything else. What about you? Here's a slice of Chaska and Cedar point beach fun for you...


What do you do when you go to the beach and forget your sunscreen and hat? You get a pretty bad tan, as simple as that...Lol!  I am loving the photos at the beach a lot but not my burnt skin at the moment! It was a long weekend of the Memorial Day and we had an unplanned trip to the pristine shores of Lake Erie - a perfect combination for a lovely getaway. The beaches are beautiful, happening and the water very blue. If you ever happen to visit the east coast than don't miss out the serene shores of Lake Erie, you will love it and the fun part of the Cedar Point beach is that the shallow waters allow you to walk in the lake! Yes Yes, you can walk in the water for a very long distance without any magical powers and no swimming skills at all. The surface is sandy, flat and the blue water is very shallow. It's like walking on soft cushy sand with lots of water and frequent waves. The immaculate beaches of Erie are one of the best destinations for a short family getaway from Columbus, Ohio. We had a lovely time out there and came back with a bagful of wonderful memories to relish throughout our life! In spite of all the fun & frolic and so much water splashes, I missed blogging a lot! 


So, here I am with the blogging spirit all high and soaring and here's this fantastic delicious green smoothie recipe for you guys to enjoy during the hot summer months. This mango kale smoothie is delicious to the power infinity, it's one of my most favorite green smoothies and we love it especially during the summer months when fresh mangoes are available in abundance almost at every store. The Mango Kale Date smoothie is nutrient-rich, smooth, silky, creamy and has a gorgeous green color too. Perfect to serve a few friends, an appropriate nutrient rich morning breakfast, and a fantastic afternoon drink too.


I added 2 Medjool dates and a bit of maple syrup to naturally sweeten my green smoothie. Oh Yes! I have quite a bit of a sweet tooth. But you may totally skip the maple syrup part or even sub it with honey if you don't have maple syrup in your pantry. I also added a bit of coconut cream to make my Mango Kale Date Smoothie a bit creamy and rich but you may opt out for that part or sub it with any thick yogurt variety. It's pretty customizable, by stating that I mean you can't just opt out on anything and everything for something else, that will eventually distort the Mango Kale Smoothie Recipe and you will end up with something else altogether! But you sure can substitute a few ingredients with a similar tasting counterpart. After all trust your instincts and taste preferences. 


I love maple syrup and coconut cream in my green smoothie recipe they definitely do impart a rich creamy taste. And oh yes, I recently made a gorgeous jar of Almond butter at home and I added 1 tablespoon to this Mango Kale Smoothie and believe it or not it worked as a magic! Do add some almond butter and let me know how you liked the taste! We loved it to the core and hence-forth I will be adding it to many more smoothies. 

Here's the list of Substitutions that will work wonderfully well with this Mango Kale Date Smoothie :

* Maple Syrup = Honey.

* Coconut cream = Thick Yogurt, like greek yogurt.

* Kale = Baby Spinach.

Here's how to make it...5 minutes time + a blender + 7 ingredients!

INGREDIENTS:

*1 cup chopped fresh mangoes.

*Handful of Kale leaves.

*2 Medjool dates.

*3 tablespoons maple syrup.

*3 tablespoons coconut cream.

*1/2 cup unsweetened almond milk or according to taste.

*1 tablespoon home-made almond butter.

METHOD:



*Chop the mangoes roughly. Keep aside.

*Wash the kale leaves and keep aside.



*Add all the above-mentioned ingredients into your blender jar.

*Blend until smooth consistency.


*Enjoy!
