White Chocolate Chip Cranberry Oatmeal Cookies-Chewy and Tasty!

It was raining incessantly yesterday and my 4 years old was unable to visit the nearest park, the poor little guy was all stuck indoors! He chose to bake some cookies with me, it's one of his favorite ways to pass his extra time when stuck indoors due to bad weather and its also an excuse to fiddle with flour, butter, crack the eggs, whisk them, prepare the dough, bit by bit pop it inside mouth sneakily; what more a 4-year-old's soul can ask!

We happily decided on a batch of soft and chewy white chocolate and cranberry oatmeal cookies. My son is a huge lover of white chocolate, oats, and cranberries too and he loves the soft and chewy texture of these oatmeal white chocolate and cranberry cookies. This recipe required a few ingredients which I already had in my pantry because I bake a lot. We started by creaming the butter, the sugars, egg, and the vanilla. He helped me sift the dry ingredients and whisked them diligently with his tiny fingers. It was definitely an adorable sight to watch. 

Loaded with vitamin A and vitamin C these oatmeal white chocolate and cranberry cookie is a pretty simple cookie and as a result, it's dough is quite straightforward. These oatmeal cookies are packed with white chocolate chips and cranberries and is so yummy. The tang of the cranberries is well balanced by the sweetness of the white chocolate. They are soft and chewy and you can never go wrong with these cookies. We preferred to chill our dough for 30 mins because we don't like our oatmeal cookies to spread more and thin out like a disc. These oatmeal cookies indulgently use a hint of cinnamon that infuses a perfect autumn flavor to the cookies. I love to make these delicious oatmeal white chocolate cranberry cookies with my son and I hope you too will enjoy the whole process. Let's get baking!

* 1 cup + 2 tablespoon unbleached all-purpose flour.
* 1/2 teaspoon baking soda.
* 1/2 teaspoon ground cinnamon.
* 1/4 teaspoon salt.
* 1/2 cup unsalted butter at room temperature.
* 1/3 cup dark brown sugar.
* 1/4 cup granulated white sugar.
* 1 egg at room temperature.
* 1 teaspoon vanilla extract.
* 1 cup + 1/2 cup old-fashioned rolled oats.
* 3/4 cup + 1 tablespoon dried and sweetened cranberries.
* 3/4 cup + 1 tablespoon white chocolate chips.

* In a large dry bowl whisk the dry ingredients together - unbleached all-purpose flour, salt, cinnamon and baking soda.
* In a separate dry bowl take the unsalted butter, brown sugar and the granulated white sugar and beat until smooth.
* Add the egg and the vanilla extract, beat until fully incorporated.
* Gently add the dry ingredients to the mixture of wet ingredients and mix scraping the sides with a spatula until fully incorporated.
* Add the cranberries and the white chocolate chips and combine until they are well distributed in the dough.
* Cling wrap the dough and refrigerate until 30 mins ( this will prevent the cookies from spreading way too much).
* Line a baking tray with parchment paper and preheat the oven to 350 degrees F.
* Take out the refrigerated dough and scoop out small portions with an ice cream scooper.
* Roll them inside palms, put them on the baking tray and gently flatten them with your fingers.
* Bake them for 10-12 mins.
* Allow them to cool down for 10 mins and then transfer them to a cooling rack.
* Enjoy!

* Chilling the cookie dough helps prevent the cookies from spreading way too much.
