No Bake Egg-less Cheese-cake with only 2 Main Ingredients and garnished with fresh strawberries.


It was another exciting weekend well spent with my enthusiastic 4-year-old son and my hubby. We went to the zoo and it was a day-long trip while on our way back home out of the blues my son remembered buttercream frosting on cakes and perhaps he imagined himself happily enjoying its heavenly taste, he immediately said, " momma can you please make me something which tastes like buttercream icing, I badly want to eat it." 😜 Gosh! toddlers and their little minds I wish I could ever decipher their thoughts 😲 He left me totally clueless and I thought no way I can start making another batch of buttercream icing at 7:00 pm from scratch.
 

I instantly thought of making a no-bake cheesecake that could be fixed in a blink of an eye hence, I decided on this hassle-free no bake no eggs cheesecake recipe because I had everything in the fridge and in my pantry and the recipe called for only 3 main ingredients.
I fixed it up in less than 35 mins and my son just loved it. Needless to mention that it tasted heavenly, we too desperately dug into it!
So here's the recipe for the cheesecake, hope you and your family will love the taste :

INGREDIENTS:

125 grams graham crackers or digestive biscuits.
75 grams butter.
300 grams cream cheese
60 grams sugar
1 teaspoon vanilla extract
250 milliliters Heavy whipping cream (very good quality dairy cream)
Strawberry jam as per taste (can use homemade jam)

METHOD:

*Crush the graham crackers/digestive biscuits in a bowl or inside a ziplock bag for convenience.
*Melt the butter and then pour into the bowl of crushed crackers/biscuits and stir well. Choose your favorite container and press the biscuit mix with the help of a spatula. Keep it in the fridge and let it sit for 10 mins. Spoon out the jam and spread it evenly on the top of the biscuit layer.
*In a separate large bowl beat together the cream cheese, sugar and vanilla extract until smooth. In another bowl whip the double cream, and then pour and fold it into the cream cheese mixture gently. Do not over mix.
*Carefully spoon the cheesecake mixture evenly over the biscuit and strawberry base.
*Leave in the fridge overnight.
*Garnish it with fresh whole/sliced/chopped strawberries or pour a generous amount of homemade strawberry sauce.
